Signature Dining — Six Restaurants, One Kitchen Standard
From the champagne breakfast terrace to the twelve-seat chef's counter, one kitchen brigade runs every table in the house — with the same produce, the same standards and the same obsession.
A Kitchen That Thinks in Seasons and Tide Charts
Executive Chef Marisol Vane rebuilt the menus around a 60-kilometre radius — Atherton Tablelands farms, day-boat landings at the marina and the hotel's own 1.2-hectare garden. What arrives at dawn is written into the menu by noon.
The Marlin Room leads with an eight-course tasting ledger; Garden Grill handles the long lunches; Canton Quarter serves the most honest Cantonese in the tropics; Café Crest runs the dawn service; the Velvet Gauge covers late; and the chef's counter — twelve seats, four nights a week — is where the brigade cooks for the sheer theatre of it.
All services
The Dining Privileges
Day-boat direct
Coral trout, bugs and prawns bought at the wharf each morning — never frozen, never freighted.
Estate garden
Herbs, citrus and table greens cut metres from the pass — the shortest supply line in the city.
Reserve cellar
4,200 bottles eight metres down — including a Grange vertical back to 1971.
Dietary authorship
Vegan, gluten-free and halal-considerate courses written for you — not adapted as an afterthought.
A menu should read like a tide chart — written fresh, faithful to the morning it came from.
From Booking to the Last Spoon
Dining at Tasman Crest is booked like theatre — the seat, the hour, the pairing, the pacing.
Choose your table
Six rooms, different tempos. Tell the desk the occasion and they'll steer you honestly.
Share the particulars
Allergies, dislikes, celebrations — the kitchen writes around them before you sit, never during.
Arrive hungry, leave slowly
The pace is yours; courses land when you're ready, and nobody watches the door on your behalf.
The Marlin Room Tasting Ledger

A Tasting Evening
Champagne & amuse
The ledger opens with a pour and the chef's first postcard from the market.
The middle courses
Seafood to meat in five movements — each paired, each explained in one sentence, no lectures.
Sweet finish
Dessert, cheese trolley if you wish, and the chef's signature across your printed menu.
How far ahead should I book the Marlin Room?
Is there a dress code?
Can the tasting menu be adapted?
Eight courses, not a single one showing off. The wagyu course alone justifies the airfare.
Tonight's Ledger Is Already Written
Eight courses, twelve counter seats, one kitchen that never repeats itself.
