Hidden behind the library on level 8, the Velvet Gauge pours botanical cocktails under the dome's silhouette — with jazz trios, late sessions and a view the postcards never got.
A Bar That Reads the Weather and the Hour
Our alchemists build the menu around Daintree botanicals — lemon myrtle, finger lime, wattleseed — and a back shelf of small-batch Australian spirits you won't find in the bottle shops. Smoke is served under cloches; citrus arrives as caviar.
The rail seats face the inlet — held back for members and residents nightly — while the inner booths run on jazz trios Thursday to Saturday and DJ sets to 01:00. After midnight on clear nights, the deck telescopes come out and the astronomer takes over.
